Can AccuGrade Cut out a constant depth?

My question is, with GPS or Laser systems on a dozer, is it possible to set it NOT to a flat finish grade, but to cut a constant, set amount of inches of material out throughout the entire area? For example you have a pasture, and you only want to cut the grass out, and nothing more, even with some very slight existing elevation changes.
