Have an EX-100 with pump control issues, runs super slow, could use manual code retrieval procedure, have the manuals for it but it refers to using Dr-ZX which I do not have.

Do the manuals have a list of fault codes ? Pull the cover behind the seat and count the flashing red light on the box.

Seems simple enough, yes i have the codes, does the PVC store codes or just faults at that moment?

As long as the faults are active they should flash.
