Kobelco SK75SR-3E rpm/ hyd pressures on monitor?

Serial # YT08-30095. Have been helping a friend do some work for years now, he has a Kobelco SK75SR that he purchased new and now has 2200 hours on it. It has seemed like from day one that it does not run at the right rpm or the hydraulic flow isn't set right, she seems a bit sluggish, and we run it in the "H" mode. The operators manual gives no details on getting into the monitor to view pressures or rpms. So my question is, can those things be viewed from the monitor, if so can they be adjusted from the monitor, and does anyone have the specs for rpm and hydraulic pressures if it can be viewed/adjusted. Also, is there anyway to get it to stay in "H" mode so it doesn't need to be set every time it is started?

Thanks so much LACHAU, really appreciate the info. Any idea what the rpms should be at full throttle in "H"mode?
